Bakery is a traditional activity and occupies an important place in food processing industry. The bakery manufacturers in India can be differenciated into the three broad segments of bread, biscuits and cake. About 1.3 millions tonnes of the bakery products industry in India is in the organized sector out of 3 millions tonnes, while the balance comprises of unorganized, small-scale local manufacturers.

There are sufficient automatic and semi-automatic bread as well as biscuit manufacturing units across

India but there are still large number of people who still look for fresh bread and other products from the local bakery. Bakery products are an item of mass consumption in view of its low price and with rapid growth and changing eating habits of people, bakery products have gained popularity among masses.
